of course no butcher will use prime meat for sausages.
This doesn´t mean however that everything except ham and/or
steaks is junk. It depends on what you make of it.
In the old times, smoked or dried sausages just were a method of
preserving food.
So, apart or Germans being frenzy about their sausages, there´s basically
nothing worng with it.
The best sausages can be found outside of Germany, as for example
Hungarian or Italian Sakami.
